Horopito Crumbed Rack of Lamb

(Serves 2)

Ingredients

  • 1 medium size Lamb Rack (7 ribs)

Horopito Crumb Mix

  • ½ cup breadcrumbs
  • salt and finely ground hot pepper
  • fresh chopped or dried horopito

Mix thoroughly

Method

Clean Lamb Rack leaving a little fat on it.

Score with criss-cross with a knife.

Season with salt and pepper.

Seal off lamb rack in a pan to hold juices in.

Rub 1 tsp mustard over seared lamb rack and crumb with the horopito crumb mix.

Bake in oven 20 – 25 minutes.

Rest for about 5 minutes and then serve.

Wine match

Something with both savoury notes and bright fruit to handle the herbal notes, but some grip to cope with the fat.

Sierra Cantabria 2010 (Rioja, Spain) Delicate fruit but not wishy-washy. Good lines of oak and light vanillins. Dry. Spices and berries. Liquorice and herbals. $30

d’Arenberg D’Arry’s Original Shiraz Grenache 2009 (South Aust.) brightly fruited – red berries. Warm and round. Brambles and chocolate notes. Will repay cellaring! I recently tried the 04 and it was savoury, dense and complete. $25-30
