Herbed Mayonnaise

  • 2 eggs
  • teaspoon of salt
  • quarter to half a cup of fresh herbs
  • quarter cup of white wine vinegar
  • teaspoon of sugar
  • 1 crushed garlic clove
  • about one and a half cups of oil of choice (I use rice bran)


Put first six ingredients in a food processor. Process until mixed.

Add oil in a thin stream while machine is on high. After 1 cup is added, mayonnaise is like cream After the next half cup is added, mayonnaise is like lightly beaten cream.

Leave for 30 minutes.

Keeps well in fridge. Just stir every time you use it.
