Harvest Tomato Paste

This rich and tasty paste is perfectly suited for pizza or pasta, using your fresh, home-grown tomatoes. A great way to make use of an autumn glut!

Ingredients

  • 1 kg end of season tomatoes (split tomatoes are fine)
  • 1 large onion or 4 shallots
  • Handful each of fresh thyme, oregano and basil, chopped
  • 2 cloves of garlic or 1 tsp crushed garlic
  • 1-3 red chillies chopped (to taste)
  • 2-3 tsp brown sugar or agave syrup
  • 200 ml of tomato paste
  • Salt and pepper to season (to taste)
  • Glug of olive oil

Method

Line a baking tray with baking paper and preheat oven to 140 degrees

Place all ingredients on tray and mix together add salt and pepper and olive oil

Bake in the oven for 2 hours stirring after an hour.

Allow to cool

Whizz up in blender and freeze into portions in ice cube trays or small containers

Great for pizzas and pasta.
