Ingredients
- 185g butter
- 1 cup soft brown sugar
- 2 eggs
- 1 and 1/2 cups grated zucchini
- 1 and 1/2 cups self raising flour
- 3/4 cups cocoa
- 2 tbsp finely grated orange rind
- 3/4 to 1 cup plain yoghurt
Method
- Grease and flour cake tin
- Cream butter & sugar and beat in the eggs one at a time. Gradually stir in the other ingredients
- Stir in enough to combine ingredients but not over beat
- Pour batter into the cake tin and bake at 200c for about 50 minutes or until firm
- Leave for 5 minutes before turning onto a cake rack
- Ice when cool
