Great Zucchini Chocolate Cake

Ingredients

  • 185g butter
  • 1 cup soft brown sugar
  • 2 eggs
  • 1 and 1/2 cups grated zucchini
  • 1 and 1/2 cups self raising flour
  • 3/4 cups cocoa
  • 2 tbsp finely grated orange rind
  • 3/4 to 1 cup plain yoghurt

Method

  • Grease and flour cake tin
  • Cream butter & sugar and beat in the eggs one at a time. Gradually stir in the other ingredients
  • Stir in enough to combine ingredients but not over beat
  • Pour batter into the cake tin and bake at 200c for about 50 minutes or until firm
  • Leave for 5 minutes before turning onto a cake rack
  • Ice when cool
