French Style Whitebait Patties

Ingredients

  • 200 g white bait (or as a back up grated potato but only if you are desperate !!)
  • 3 eggs
  • Chopped parsley
  • Pinch of salt
  • One lemon
  • Marlborough Flacky salt
  • Freshly ground black pepper
  • White bread and butter

Method

Seperate the eggs and beat the whites until soft peak with a pinch of salt and and one tablespoon of freshly chopped parsley. Mix the bait
and yolks and then fold in the whites, drop tablespoons into a warm pan and flip once.

Place on a large plate with butter and bread (white only), lemon wedges and pepper grinder.

You can be rewarded with a cold beer - ok wine as well, gather fishing acquaintances and enjoy.
