French Style Whitebait Patties
- 200 g white bait (or as a back up grated potato but only if you are desperate !!)
- 3 eggs
- Chopped parsley
- Pinch of salt
- One lemon
- Marlborough Flacky salt
- Freshly ground black pepper
- White bread and butter
Seperate the eggs and beat the whites until soft peak with a pinch of salt and and one tablespoon of freshly chopped parsley. Mix the bait
and yolks and then fold in the whites, drop tablespoons into a warm pan and flip once.
Place on a large plate with butter and bread (white only), lemon wedges and pepper grinder.
You can be rewarded with a cold beer - ok wine as well, gather fishing acquaintances and enjoy.
