Crunchy Parmesan-Crumbed Chicken

Serves 2


1 cup (70g) fresh breadcrumbs
¼ cup (20g) finely grated parmesan
30g butter, melted
1 tablespoon finely chopped thyme leaves
cracked black pepper
2 x 200g chicken breast fillets, trimmed and halved
lemon wedges and green salad, to serve


Preheat oven to 200°C (390°F).

Combine the breadcrumbs, parmesan, butter, thyme and pepper.

Place the chicken into a baking dish lined with non-stick baking paper. Top chicken with breadcrumb mixture.

Bake for 10 minutes or until the chicken is cooked through and the crumbs are golden.

Serve with lemon wedges and green salad.
