Couscous Salad

  • 1 cup couscous
  • 1 cup cold water
  • 3 Tbsp olive oil
  • Juice 2-3 lemons
  • 1 small tsp instant chicken stock
  • 1 tsp sweet chilli sauce
  • Salt and freshly ground black pepper
  • 30g pistachio nuts
  • ½ cup roughly chopped mint


Place all ingredients in a bowl except nuts and mint.  Stir to combine and leave for 15 minutes for couscous to absorb the liquid.  Fluff with a fork, add pistachios and mint and toss lightly to combine.  Taste for seasoning.  Couscous needs to be well flavoured.
