Corn Fritters

3:10 pm on 8 February 2013

  • 3 cobs of corn
  • 3 eggs
  • ¼  red pepper
  • 1 small red onion
  • Grated cheese
  • ½ cup flour
  • Baking powder
  • Salt
  • Pepper
  • Oil for frying

Strip off the corn's husks, then cut the corn kernels off the cob. Hold the cob upright and run a knife down the cob.Put 2/3 of the corn into the food processor, and the rest into a bowl. Into the bowl, add the finely diced onion, ½ cup of grated cheddar and the red pepper.

Crack the eggs into the food processor along with ½ tps of salt. Give the contents of the food processor a good whirr. Stop and add the flour and baking powder and whiz some more. Add the contents of the bowl to the food processor and pulse a couple of times to combine. Tip the mixture into a bowl and set aside ready to fry.

In a pan, heat some oil. Fry spoonfuls of the batter, turning once the first side is cooked.
