Sri Lankan coconut sambal is popular around the globe. Sambal was traditionally made using a rectangular grinding stone with a roller. Nowadays, it takes only a few minutes to prepare in a food processor.

 
2 cups freshly grated coconut
10-12 dried red chillies 1-2 small pink shallots 15-18 curry leaves
salt to taste
juice of ½ a lime

serves 4
prep 30 mins
 
1    Place the chillies in a food processor and crush into a coarse powder.

2    Add the grated coconut, pink shallots and curry leaves, and grind to a coarse mixture.

3    Add the salt and fresh lime juice. Mix well.

4    Serve as a relish with hoppers, chapati, naan, puttu or string hoppers. It tastes delicious with just about anything!
