Cinnamon Frosting

  • 90g unsalted butter (cubed and at room temperature)
  • 250g (1 + 2/3 cups) icing sugar (sifted)
  • 45ml (3 tbsp) brandy    1 tsp vanilla extract
  • 1 tbsp finely grated lemon zest
  • 1 + 1/2  tsp ground cinnamon


Place butter and icing sugar into a bowl and beat till smooth.

Add brandy, vanilla, zest and cinnamon and continue beating till frosting is very smooth and creamy.
