Christmas Mince Pies

If you have time, make some of these little pies before you get too busy, and put them in an airtight container  in the freezer until you want them.

Ingredients

Pastry

  • 100g butter
  • 1/2 cup sugar
  • 1 egg
  • 1 cup flour
  • 1 cup self-raising flour

Method

Soften but do not melt the butter. Beat in the sugar and egg, then add the sifted flours, chilling the mixture if it seems too soft to roll out and shape.

Roll out the dough on a lightly floured board, then using a metal cutter or a glass, cut the dough into circles and gently ease them into medium, or mini muffin pans.

Spoon some mincemeat into each circle.

You can put a smaller circle of dough on each little pie,  or cut fancy shapes, like  hearts or stars on each little pie.

Bake at 170C - 180C for 12 - 15 minutes, until the pastry is light brown at the edge.

Cool for 3 - 4 minutes before lifting carefully onto a cooling rack.  Serve warm dusted with icing sugar.
