Chocolate Rice Pudding

(Serves 6)

Ingredients

  • 1 litre full cream milk
  • 250 ml cream
  • zest of 1 orange
  • ¾ cup brown sugar
  • ½ cup Italian risotto rice
  • 200g coarsely chopped, best quality dark chocolate
  • whipped cream
  • cocoa mixed with a little ground cinnamon for dusting

Method

Put the milk, cream, zest, sugar and rice into a heavy based saucepan and bring to the boil, stirring frequently.

Simmer, stirring frequently, for 30 - 40 minutes until the rice is tender and the mixture creamy and thick.

Remove from the heat and add the chocolate. Give the mixture a couple of turns with a spoon to ripple the melting chocolate through the pudding then pour into a serving dish.

Serve warm or at room temperature with a dollop of whipped cream and a good dusting of cocoa and cinnamon.
