Ingredients
Base
- 125 g butter
- 1/2 cup brown sugar
- 1 1/4 cups flour
Topping
- 1 tablespoon cornflour
- 1 cup long thread coconut
- 1/2 cup brown sugar
- 3/4 cup mixed dried fruit
- 3/4 cup walnuts
- half a packet of glace oranges and glaze citron
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla
- 2 eggs
Method
Base
- Cream the butter and sugar. Rub in the flour. Press into a 20cm flan tin or a swiss roll tin (square or rectangle).
Topping
- Bind all the topping ingredients together. Spread it on the raw base and bake for 25 minutes. Dust with icing sugar
