Bun Tang’s Marinade for Red Meat

This will make tough meat tender. Two hours marinating is sufficient, if left to marinate in the refrigerator overnight, the meat will fall apart.   

Ideal for when using inexpensive cuts of meat like blade, knuckle and rump steak.

Ingredients

  • 1 tsp salt
  • 1 tsp cornflour
  • 1 tsp sugar
  • 1 tsp of bicarbonate of soda to be added later

Optional ingredients to taste:

  • clove of garlic
  • dash of red or white wine
  • dash of soya sauce, plum sauce, tomato sauce, barbecue sauce, or Worcester sauce

Method

Mix together the essential and optional ingredients in a bowl, add half a cup of water, then add the bicarbonate soda, stir gently, it will froth slightly.
