Bruschetta is the ultimate tomatoes on toast.


  • a loaf of French baguette, a ciabatta loaf or your preferred bread
  • olive oil
  • 1 clove of garlic, peeled and halved
  • half a dozen medium sized tomoates
  • basil leaves
  • salt and pepper


Slice your loaf and brush both sides with olive oil and grill or toast over your BBQ.

Once toasted, take a peeled and halved clove of garlic and rub over the toast – giving a lovely hint of garlic.

Dice half a dozen medium sized tomatoes.  Roughly rip 20 or so leaves of basil and add to diced tomatoes. Add a good splash of extra virgin olive oil – a couple of tablespoons, season with salt and pepper and toss to combine.

Once bread is ready spoon over the tomato mix, add little drizzle of balsamic creamer.
