Brunch Pizzas

Pizza for breakfast is a great way to feed a hungry crowd, plus it’s hard to beat an eggy pizza. Here are three of my favourite toppings. I use store-bought pizza bases here, but you can totally make your own. Tortilla wraps and naan bread also make excellent throw-together pizza bases if you’re in a hurry and already have these items in the fridge or freezer.

Caramelised onion, chorizo & mushroom pizza

Lightly pan-fry assorted mushrooms with 2 tbsp olive oil. Season with salt and freshly ground black pepper. Spread the pizza base with store-bought or homemade caramelised onions, top with mushroom mixture and some shredded rosemary leaves. Split a fresh chorizo sausage in half and dot the chorizo meat across the top of the mushroom. Crack an egg into the centre and grill for 4-5 minutes, until pizza base is crispy and golden. Drizzle with extra virgin olive oil to serve.
 

Spinach, smoked salmon & avocado pizza

Thinly spread some cream cheese onto a pizza base and top with baby spinach leaves and avocado slices. Season with salt and freshly cracked pepper. Crack an egg into the centre and grill for 4-5 minutes, until the pizza base is crispy and golden. Ribbon cold-smoked salmon across the pizza and drizzle with extra virgin olive oil to serve.
 

Huevos rancheros breakfast pizza

In a small saucepan, saute ½ a sliced onion with 1 tbsp olive oil. Add 2 tbsp tomato paste, 1 cup of diced tomatoes and 1 cup of drained black beans. Cook for a few minutes until the mixture has thickened slightly. Season with salt and freshly ground black pepper. Spread black bean mixture onto a pizza base. Top with sliced jalapenos, diced tomatoes, crumbled feta and crack an egg into the centre. Grill for 4-5 minutes, until the pizza base is crispy and golden. Top with fresh coriander leaves, sliced spring onions and a squeeze of fresh lime juice to serve.
