Boatshed Flounder

  • medium size fresh flounder
  • olive oil
  • 1 tspn fresh grated ginger
  • 1 tspn chopped coriander
  • 1 tspn chopped chives
  • Shoyu soy sauce
  • Half tspn Brown Rice vinegar
  • half tspn Thai Fish sauce
  • fresh pepper


Remove head and tail from medium size fresh flounder. Prepare a double layer of foil with half tblsp.olive oil and place flounder in middle, pale side down. On topside spread fresh grated ginger, coriander and chives. Generous sprinkle of Shoyu soy sauce, half tblsp olive oil, Brown Rice vinegar and Thai Fish sauce. Wrap by gathering sides up and folding carefully down, then fold ends in, sealing , but for easy opening. Cook for 15 minutes at 200 C fanbake. Lift package onto plate, open and roll edges of foil out. Sprinkle crouton into juice around edge of fish and a grind of fresh pepper.
