Baked Olives
Ingredients
- 500g kalamata olives (drained)
 - 2 bay leaves
 - 4 sprigs of thyme
 - 1/2 tsp fennel seeds
 - 1/2 tsp coriander seeds
 - 1/2 tsp dried chilli flakes
 - 2 garlic cloves peeled and crushed
 - 2 Tbsp extra virgin olive oil
 - rind of 1 orange
 
Method
Combine all ingredients in a bowl, then pour into a heavy based roasting dish. Cover with foil and bake for 15 minutes or until olives are plump and juicy.
