Al’s Mayonnaise

I’ve used this mayonnaise recipe for most of my cooking career.  It’s simple to make and it can be utilised in so many different recipes or dishes.

Makes about 1½ cups

Ingredients

  • 4 egg yolks
  • ½ tablespoon Dijon mustard
  • 3 tablespoons lemon juice
  • 2 tablespoons cider vinegar
  • 1 tablespoon water
  • 2 tablespoons sugar
  • 1½ cups canola oil
  • salt and freshly ground black pepper

Method

Place the egg yolks, mustard, lemon juice, cider vinegar, water and sugar in a bowl and, using a wand blender (or place in a liquidiser), process for 5 seconds until incorporated. With the motor running, slowly drizzle in the oil. Season with salt and pepper. Store in the refrigerator for up to 2 weeks.
