Almond Crusted White Fish
- 10 g chopped fresh chives
- 10 ml fresh lemon juice
- salt and pepper to taste
- 6 fillets fresh NZ processed fish
- 30 ml vegetable oil
- 15 g unsalted butter
- 40 g fresh bread crumbs
- 100 g minced or sliced local almonds
- 1 egg, lightly beaten
Heat oil and 1 tablespoon butter in a large pant over medium-high heat.
Sauté fish fillets for 1 -2 minutes on each side, or until l browned but not cooked.
Transfer to a baking sheet, In a small bowl, stir together bread crumbs, chives almonds and 1 tablespoon melted butter.
Brush tops of fillets with egg, and spread with almond mixture and then bake in the oven for 4 minutes or until cooked.
Serve with seasonal salad greens and crusty local bread.
