  • 1 clove garlic
  • ¼ tsp sea salt
  • 1 egg, yolk only
  • 3 drops lemon juice
  • 225ml grape seed oil
  • 100ml water, at room temperature
  • sea salt to taste


Bring all the required ingredients up to room temperature.

Peel and roughly chop the garlic clove. Place into a mortar and pestle, add the salt and grind to a paste.

Place the paste, egg yolks and lemon juice into the bowl of a blender and pulse until thoroughly incorporated.

With the blender running slowly add half of the grapeseed oil, in a continuous stream,

Stop every now and then to let the mixture emulsify fully then with the motor still running slowly add the water, then continue to add the rest of the oil, blend until well emulsified.

Season to taste.
