All the ways with the season’s fruit

To be honest, given the plethora of summer fruit I am not sure why you wouldn’t want to, just, you know, eat them. But if you must cook, for example, fresh raspberries into a dish, here are some things to do with them.

Compiled by Megan Whelan

Recipes

  1. 01

Raspberry, Coconut and Almond Bread and Butter Pudding

This actually uses frozen raspberries, so you can take it to the neighbourhood potluck and keep the fresh ones you scored at home for yourself.

  2. 02

Summer Berry 'Mess' with Greek Yoghurt & Cinnamon Meringues

Honestly, I think a mess is a perfect summer dessert.

  3. 03

    Strawberry Fritters with Raspberry Sauce

    Strawberry Fritters with Raspberry Sauce

When I showed this recipe to my boyfriend, he said “so, deep fried strawberries?” And, yeah, I don’t know really why that’s a thing you would want to do.

The raspberry sauce is legit though.

  4. 04

    Raspberry, orange and basil cake/loaf

    Raspberry, orange and basil cake/loaf

You know when you go to visit those family friends and you’re not quite sure what to take, but you should take something, and honestly, if you see another box of chocolates you’re going to throw something? Why not a loaf?

  5. 05

    Melon Caprese Salad

Not all summer fruit has to be dessert.

As much as I love the Italian trio of tomato, mozzarella and basil in a classic caprese, the freshness of the melon in this salad is an absolute dream on a hot summer day, and pairs so beautifully with the soft, creamy cheese and the salty prosciutto.

  6. 06

    Custard Cherry Cake

One thing that means Christmas to me is the two bowls on the table at my parents. One, stocked with chocolates, and one with a supply of cherries. If you need more cherry content in your life though, cake?

  7. 07

Peach & Roasted Red Pepper Salad

Perfect for a barbecue, whether or not you are inviting anyone to join you.

  8. 08

Lamb Fillet with Salad of Grilled Peach, Watermelon & Barley Tabouleh & Lemon Yoghurt

If you have never had a grilled peach, may I encourage you to rectify that forthwith. It tastes like summer in a bite.

  9. 09

    Summer Berry Panettone Pudding

It's not just me saying it this time! Even the recipe encourages you to have this for leftover breakfast.
