Jason Timms was working as a chef at the Adelphi Hotel in Kaikoura when the quake struck last month. He spent the next week or so at the Takahanga Marae catering for thousands of displaced locals and tourists. He will run through how to cook for a crowd and how to prepare and cook a crayfish.
