A growing number of Māori are ditching dairy and meat, and embracing veganism.

The topic was at the centre of a New Zealand Human-Animal Studies conference this month, where researchers highlighted indigenous perspectives on the plant-based diet.

But how do you make classic Māori dishes like hāngi or boil-up vegan?
